For the lemon chicken casserole
• 1 ½ kg chicken pieces
• 1 COOK at HOME cooking sauce for Chicken Lemon Casserole
• 40ml olive oil (about 2 ½ tablespoons)
• 300ml water (about 1 cup)
• Salt-pepper
For the potatoes
• 700g potatoes, boiled and cut into large cubes
• 70g butter
• 70g olive oil
• 100g smoked bacon, diced
For the lemon chicken casserole
1. Season the chicken pieces with salt and pepper. Sauté the chicken in olive oil in a wide pot over high heat until it turns golden brown.
2. Add the entire COOK at HOME cooking sauce, about 1 cup of water (300ml), and mix well.
3. Cook covered over medium heat for about 45 minutes until the chicken boils. During the process, check the food and add a little water if needed.
For the potatoes
1. Sauté the boiled potatoes in butter and olive oil in a pan and set aside.
2. Continue with the bacon cubes. Once they caramelize, remove them on absorbent paper.
3. 20 minutes before removing the chicken from the heat, add the sautéed potatoes to the pot. Cook the food until it is done, and the sauce thickens.
Serving suggestion
Serve the dish with the sautéed potatoes and sprinkle bacon on top.
